Well, it’s almost time for kids to get out of school. Be sure to watch out for them when you are out and about. Here’s a cool dish for when it’s hot.
8 ounces salad macaroni
1 cup tiny broccoli florets
½ cup diced cucumber
¼ cup red bell peppers diced
¼ cup green peppers diced
¼ cup red onion diced
1 cup marinated tomatoes
1/2 t Kosher salt
¼ t black pepper to taste
1 cup marinade liquid
Cook the pasta adding kosher salt to water. Just before the noodles are done, add broccoli. Let the broccoli boil 30 minutes. Rinse well with cold water. Place the drained pasta, broccoli, cucumber, bell peppers, onion, tomato and marinade liquid in a large bowl. Toss well to coat. Sprinkle with salt and pepper. Stir. Cover and refrigerate until ready to eat. Makes six servings.

2 packages frozen peas thawed and drained
1 ½ cups diced Cheddar cheese
1 ½ cups diced Mozzarella cheese
¼ cup red onion chopped fine
1 cup of Miracle Whip or mayo
Salt and pepper to taste
½ pound bacon cooked and crumbled.
Just mix together and chill. (Note: Add these if you like: sliced boiled eggs, diced ham, green onion or Vidalia onions and peppers hot or mild.) This only takes 10 minutes to make.

Both of these are so good and do not take long to make. Stay cool and like I always say live, laugh, love and spend time with family and friends. God bless you all.
