This refreshing spring salad is perfect for entertaining. It is an excellent warm-weather first course that can easily accommodate other vegetables too. Try asparagus or broccoli for another layer of texture and crunchiness.

CRUNCHY PEA, RADISH & CELERY SALAD WITH MISO DRESSING
Serves 6
Ingredients
600g frozen baby peas
2 large stalks celery, thinly sliced
5 medium radishes, thinly sliced
¼ cup celery leaves
¼ cup mint leaves, roughly chopped
Dressing
3 tablespoons grapeseed oil
2 tablespoons shiro miso
1 tablespoon grated fresh ginger
2 tablespoons rice vinegar
1 teaspoon lemon juice
Method
Cook the frozen peas in a pot of salted boiling water for 2 minutes. Drain and cool in a bowl of ice water to preserve their colour.
Assemble the salad by placing the cooked peas, celery, radishes and mint on a platter.
Dressing: Whisk the ingredients together in a small bowl until fully incorporated.
Drizzle the dressing over the salad.
