In a large saucepan, heat oil over medium. Cook onion 3 to 4 minutes until softened. Add garlic and cook one minute more.
Add carrot and celery; cook 3 minutes. Add turmeric, ginger, pepper and cayenne. Stir until veggies are coated with spices.
Increase heat to medium-high, add broth and bring mixture to a boil. Reduce heat to low and add cauliflower and zucchini. Cover and simmer 15 to 20 minutes, until cauliflower is very tender.
Stir in kale and beans and cook 1 to 2 minutes more, until kale is slightly wilted.
Serves 6. Per serving: 198 cal, 4g fat, 0mg chol, 11g prot, 34g carbs, 7g sugar, 10g fiber, 252mg sodium
